DELICIOUS BANANA NUT BREAD

Over the years I have made banana bread by many different recipes. (I always have a couple of bananas that ripen too much before we eat them and I hate to toss them). Several months ago my daughter, Amy, told me that she found a recipe that was the best banana bread she had ever tasted. I thought to myself that most banana bread recipes always taste the same. She went on and on about how moist this is the day after you bake it. I happened to be at her house once a couple of days after she baked a loaf and this was one time she absolutely told the truth. Today was the first day that I had over-ripe bananas and the chance to make it myself. Again, she told me that it would be better the next day. However.....my husband asked me if he could cut it right after I dumped it out of the pan. I said, "Sure, AFTER I make a picture." He looked at me kinda strange but then knew exactly why! Here's the recipe. I hope you enjoy it.
BANANA NUT BREAD
1 cup sugar
1 lg. package of cream cheese
1 cup of mashed bananas (I used 2 bananas)
2 eggs
1 tsp. vanilla
2 cups Bisquick
1/2 cup chopped pecans

Cream sugar & cream cheese until light and fluffy. Beat in mashed bananas, eggs, and vanilla. Stir in Bisquick & nuts until moistened. Pour in sprayed loaf pan.

Bake for 1 hour at 350 degrees. Then cover with aluminum foil and cook for another 15 minutes.

That looks really good Sue! I love eating banana bread and cakes, but never seem to make them. I can't seem to get past the gross peel and mash the banana stage! Ewww!

Morning Sue...I love Banana Nut Bread...my sister always makes it and she use to bring me one all the time..the little Toot is getting slack! lol Thanks for coming by girl...I do think I am gonna like the table being gone and having more room in the kitchen..I am thinking about putting little curtain panels in the inside of the glass cabinets for a different look...maybe some lace ones so the inside cabinet lights will give off a soft glow...may even try some different curtains in the kitchen & dining room! lol Have a great day sweetie!

..."This was one time she told the truth." As opposed to several times when she out and out lied. :) LOL! Here's my 2 cents. The recipe calls for the banana, 1 cup I believe. It says "about 2 mashed." You even said that you use 2 mashed. I use 3...ALWAYS. That's what it takes for me to get a cup. I guess I am mashing the literal life out of mine. Isn't it the best, though! I had a piece for breakfast today. I love it. AND I love you.

Hi there, I just came across your blog from Tammy and love it. We are in the same season of life and that's always fun. I love the smocking but it looks so hard; I don't think I'd ever try it. I'll stick to quilting. Also want to try your recipe.
